Cinco de Mayo Recipes

I think I make Mexican food more than I make any other cuisine. Can you blame me? It has everything. Savory, bright, spicy, even sweet. I will never deny a taco. It doesn’t hurt that they pair perfectly with my adult beverage of choice - tequila!

  1. TAQUITOS

These creamy, crispy, flavorful taquitos might be my new party go-to. They were surprisingly simple to make, even in large quantities.

2. CHILAQUILES

The best part of this dish is that you can top it with whatever you want! Don’t like spicy? Skip the jalapeño. One of those people who can’t do cilantro? Forget it!

3. ELOTE

When I finally got around to making this at home, I was surprised to find that it is SO simple to make. If you’re grilling corn, there’s really no reason not to be smothering it in spicy vegan mayo and cashew cotija cheese.

4. GUACAMOLE

This is my 100% tried and true guacamole recipe. I’ve been making it for years, with no need to deviate from what I know works. No holiday or family get-together goes by without this exact guac on the coffee table. Luckily, it can be made in about 10 minutes or less.

5. TACOS

Who says it needs to be Tuesday to enjoy tacos? After many years of vegan taco making & eating, this recipe is my tried and true go-to. In my opinion, the avocado crema and pickled onions are what separate these tacos from the rest. Spicy, bright, comforting and refreshing? Sign me up.

6. ENCHILADAS

This exact recipe has been one I often turn to when cooking for my meat-eating family. Who can say no to 3 bean enchiladas with avocado crema? Not my fam.
