This recipe is inspired by my middle school cafeteria. Every month, a calendar would be sent home with the hot lunch options for each day. Man, when Italian dunkers were on that calendar, you knew you were in for a good month. These are greasy, cheesy, buttery and only made better by a marinara dipping sauce. There’s really no way these can go wrong.

VEGAN “ITALIAN” DUNKERS
1 French baguette
¼ cup vegan butter
2 cloves garlic, minced
¼ tsp salt
2 cups vegan mozzarella (this is my favorite recipe, but store-bought works too!)
1 cup marinara sauce
Preheat the oven to 400 degrees F.
Slice the baguette on a diagonal, about two inches thick.
Add the vegan butter, minced garlic and salt to a small, microwavable bowl. Microwave until butter is melted.
To one side of each baguette slice (the larger side if there is one), brush a generous amount of garlic butter.
Cover the same side in vegan mozz, making sure to cover the entire surface, and even let it hang over the sides.
Add all of the slices to a parchment lined baking sheet.
Bake for 8 minutes, or until the cheese is melted. Turn the oven up to broil for about two more minutes.
Remove from the oven and allow to cool about 5 minutes.
Serve warm, and use the marinara as a dipping sauce.
